Our Oil: Neither Monovarietal Nor a Blend

At Domaine Les Opies, we’ve chosen to harvest our olives by plot rather than by variety. Our centuries-old groves have always been planted with a mix of varieties, and each year, some take the lead while others fade into the background. As a result, our  oil is never exactly the same. Nature defines the taste of Opies olive oil, and that’s exactly what we love about it.

As with wine, blending in olive oil is a technique that consists of mixing oils from different varieties in defined proportions to create a final product with specific characteristics in terms of flavor, aromas, texture and structure. It is therefore not a mixture of olives, but a mixture of oils, in the same way that blended wines are not a mixture of grapes, but a mixture of wines. This process is widely used in contemporary production.

The objectives to blending olive oil are to obtain a balance, a complexity of aromas, a long-lasting taste in the mouth and more generally to maintain a consistency or even a homogeneity of taste from one year to the next. Economically speaking, the blend also serves to make an extra virgin oil and sell it at a higher price than one would sell a virgin oil.

100% Natural Olive Oil

At Domaine Les Opies, blending is out of the question. We’ve chosen to harvest our olives by plot, not by variety. Our age-old groves have always been planted with several varieties, and each year, some come to the forefront while others fade. The olives are pressed together, regardless of their variety. That’s why our olive oil is never exactly the same. Nature decides the flavour of Opies olive oil, and that’s exactly what we love about it.

Thanks to the natural qualities of the olive, olive oil can truly be considered a pure fruit juice. It’s the only vegetable oil that doesn’t require any chemical processing for extraction. That’s why, at Domaine Les Opies, we believe it’s a shame, even absurd, &to add anything before production, even if it means getting a higher yield.

Believing that nature knows better than we do what’s good for it, our olive oil is produced without any phytosanitary treatments, pesticides, or fungicides — not even those permitted in organic farming. That means no soil fertilizers or sprays on the trees. We let our olive trees defend themselves against environmental stress, allowing them to produce olive oil as pure and natural as possible.

At Les Opies, the land is cared for using traditional methods. We protect our olive trees from pests and disease naturally, by encouraging the presence and growth of beneficial wildlife and plants on the estate :birds, reptiles, insects, wildflowers, fruit trees, herbs and more.

Les Opies olive oil goes beyond organic — it is completely natural. The land, the climate and nature itself determine both the quality of the oil and the quantity we produce. As a result, each grove yields only a small amount, but we can promise you olive oil of exceptional purity and quality.

Our Commitment to Zero Plastic

Since 2020, under the impetus of Nature & Progrès, we have eliminated the plastic transport cans and the plastic duct of the bottler. Thus, transported from the mill in stainless barrels, our olive oil is stored in stainless tanks or barrels with stainless steel faucets. It is drawn on demand and is packaged only in opaque glass bottles. Thanks to this procedure, the olive oil of Domaine Les Opies is never in contact with the plastic material and remains perpetually protected from light.
